Ingredients

  • 3-4 boneless, skinless chicken breasts
  • 1 cup shredded Jack cheese
  • 2 tablespoons olive oil

  • 1 cup low-sodium chicken broth
  • ½ cup sour cream
  • Salt and pepper to taste
  • Chopped green onions and paprika for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Rub olive oil over the chicken breasts, seasoning generously with salt and pepper.
  3. In a skillet over medium-high heat, sear the chicken until golden brown on both sides, about 5 minutes per side.
  4. Add minced garlic to the pan and cook until fragrant, approximately 30 seconds.
  5. Pour the chicken broth into the skillet, scraping up any flavorful bits from the pan, and let it simmer.
  6. Stir in the sour cream until well combined, allowing it to bubble for about 5 minutes.
  7. Top each chicken breast generously with shredded Jack cheese and transfer the skillet to the oven.
  8. Bake for about 15 minutes or until the cheese is melted and bubbly.
  9. Garnish with chopped green onions and a sprinkle of paprika before serving.
