Texas Tamale Pie

A comforting blend of seasoned beef and beans topped with cornbread, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes with green chilies
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cornmeal
  • 1 cup milk
  • 1 large egg
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions

  1. Preheat your oven to 350°F.
  2. In a large skillet over medium heat, brown the ground beef along with the chopped onion for about 5-7 minutes, or until the beef is cooked through and the onion is translucent. Drain any excess fat.
  3. Stir in the black beans, diced tomatoes (with their juices), chili powder, cumin, garlic powder, salt, and black pepper. Let this mixture simmer for about 5 minutes.
  4. While the filling is simmering, combine the cornmeal, milk, and egg in a mixing bowl until you achieve a smooth consistency.
  5. Grease a 9×13-inch baking dish, and spread half of the cornmeal mixture in an even layer at the bottom.
  6. Layer the beef mixture over the cornmeal. Pour the remaining cornmeal mixture on top of the beef layer.
  7. Sprinkle the shredded cheddar cheese and sliced black olives over the top.
  8. Bake for 30-35 minutes or until the top is golden brown and the pie has set.
  9. Allow it to cool for about 10 minutes before slicing. Garnish with chopped cilantro before serving.

Notes

For added spice, include diced jalapeños in the beef mixture. For a creamy texture, mix in sour cream before layering.
