Thai Peanut Chicken Wraps

Delicious wraps filled with juicy chicken, fresh vegetables, and creamy peanut sauce, perfect for quick meals or gatherings.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 bell pepper, sliced
  • 1 carrot, shredded
  • 1 cucumber, sliced
  • 1 cup lettuce leaves
  • 4 tortilla wraps or lettuce leaves
  • 1/2 cup peanut butter
  • 3 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 tablespoons lime juice
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced

Instructions

  1. Begin by cooking the chicken. Heat a skillet over medium heat, add a splash of oil, and cook the chicken until golden and no longer pink, about 6-8 minutes per side.
  2. Remove from heat and let it rest before slicing.
  3. While the chicken is cooking, prepare your fresh vegetables by slicing the bell pepper and cucumber into thin strips and shredding the carrot.
  4. In a small bowl, mix together all the ingredients for the peanut sauce until smooth.
  5. Adjust the flavor with more lime or honey as needed.
  6. Now, it’s time to assemble. Lay your tortilla on a flat surface, layer with lettuce, sliced chicken, and your colorful veggies.
  7. Drizzle your creamy peanut sauce over the top, then roll the tortilla tightly, folding in the sides.
  8. Slice the wraps in half and serve them with any extra peanut sauce for dipping.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Keep peanut sauce separate to avoid sogginess.
