Ultimate Quick and Easy Chicken Enchiladas

Transform your weeknight dinner with these delicious chicken enchiladas, packed with juicy chicken, melted cheese, and savory enchilada sauce.

Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 8 small flour or corn tortillas
  • 1/2 cup sour cream (optional)
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine your shredded chicken with 1/2 cup of the enchilada sauce and half of the shredded cheese. Mix well.
  3. Take a tortilla, fill it with the chicken mixture, roll it up tightly, and place it seam-side down in a greased baking dish. Repeat this process until all tortillas are filled.
  4. Pour the remaining enchilada sauce over the top of rolled tortillas, and sprinkle the remaining cheese on top.
  5. Bake in your preheated oven for 20-25 minutes, or until the cheese is bubbling and golden brown.
  6. Let the enchiladas cool slightly before serving with a dollop of sour cream and a sprinkle of freshly chopped cilantro.

Notes

For added flavor, consider using rotisserie chicken and incorporating sautéed onions and bell peppers into the filling.
