Vanilla Cinnamon Buttermilk Pancakes

Fluffy, light pancakes infused with warm cinnamon and vanilla, perfect for a cozy weekend brunch.

Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract

Instructions

  1. Whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon.
  2. Combine the buttermilk, egg, melted butter, and vanilla extract in a separate bowl until smooth.
  3. Pour the wet ingredients into the dry ingredients, and gently stir until just combined.
  4. Heat a non-stick skillet over medium heat and pour about 1/4 cup of batter onto the skillet for each pancake.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with maple syrup or your choice of toppings.

Notes

For a quick buttermilk substitute, mix milk with a splash of vinegar or lemon juice.
