Vegetarian Pasta Primavera

A vibrant and fresh dish featuring pasta and seasonal vegetables, all enveloped in a light olive oil dressing.

Ingredients

  • 8 oz pasta (spaghetti or penne)
  • 2 tbsp olive oil
  • 1 bell pepper (sliced)
  • 1 zucchini (sliced)
  • 1 carrot (sliced)
  • 1 cup cherry tomatoes (halved)
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Fresh basil for garnish
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta according to the package instructions, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced bell pepper, zucchini, and carrot. Sauté for about 5-7 minutes until the vegetables become tender.
  4. Incorporate the halved cherry tomatoes and minced garlic into the skillet, cooking for an additional 2 minutes.
  5. Season the vegetable mixture with salt and pepper to taste.
  6. Toss the cooked pasta into the skillet with the sautéed vegetables, mixing well to combine all the flavors.
  7. Serve hot, garnished with fresh basil and optional grated Parmesan cheese.

Notes

For extra richness, consider adding a dollop of cream or a splash of lemon juice before serving.
