Weeknight Philly Cheesesteak Quesadillas

Delicious quesadillas combining flavors of a classic Philly cheesesteak with a quick, easy preparation.

Ingredients

  • 1/2 lb Cheese steak beef
  • 1 tsp Garlic
  • 1/2 Green bell pepper
  • 6 oz Mushrooms
  • 1/2 Onion
  • 1/2 Red bell pepper
  • 2 tsp Mayonnaise
  • Salt and pepper to taste
  • 1 tbsp Olive oil
  • 3 slices Provolone cheese
  • 1 Flour tortilla burrito

Instructions

  1. Start by heating olive oil in a skillet over medium heat.
  2. Add the onions, green bell pepper, red bell pepper, and mushrooms to the skillet. Sauté until the vegetables are soft and fragrant.
  3. Toss in the chopped garlic and the cheese steak beef, cooking until the beef is thoroughly cooked.
  4. On one side of a tortilla, spread a layer of mayonnaise, then spoon on the beef and veggie mixture. Top with provolone cheese.
  5. Fold the tortilla in half and place it back in the skillet. Cook for about 2-3 minutes on each side or until golden brown and the cheese is melted.
  6. Slice the quesadilla into wedges and serve with your choice of sour cream, salsa, or guacamole.

Notes

Feel free to swap veggies based on preference. For a vegetarian option, substitute beef with lentils or beans.
