Hearty White Bean Soup

A comforting and nutritious white bean soup, perfect for chilly evenings. Packed with flavor and easy to prepare.

Ingredients

  • 2 cans white beans, drained and rinsed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. Stir in minced garlic, diced carrots, and celery. Cook for about five minutes until softened.
  3. Add rinsed white beans, vegetable broth, thyme, and rosemary. Bring to a gentle boil.
  4. Reduce heat to a simmer and cook for about 20 minutes, allowing flavors to blend.
  5. Season with salt and pepper. Blend for a creamier consistency or leave chunky.
