White Lasagna Soup

A creamy and hearty twist on traditional lasagna, perfect for chilly evenings.

Ingredients

  • 1 pound ground meat (sausage or chicken)
  • 8 ounces lasagna noodles, broken into pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Heat a large pot over medium heat and brown the ground meat thoroughly.
  2. Add diced onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the broth, broken lasagna noodles, and Italian seasoning. Bring to a boil, then reduce heat to a simmer and cook for about 15 minutes, until noodles are tender.
  4. Pour in the heavy cream and add ricotta cheese, stirring until well combined and creamy.
  5. Season with salt and pepper to taste. Serve hot, topped with shredded mozzarella cheese and garnished with fresh basil or parsley.

Notes

For a lighter option, swap ground meat for turkey or use gluten-free noodles. To elevate flavor, brown the meat with Italian seasoning.
