White Lasagna Soup

A cozy and creamy soup that captures the comfort of classic lasagna in a slurpable form, perfect for chilly nights.

Ingredients

  • 1 lb ground meat (beef or Italian sausage)
  • 8 oz lasagna noodles
  • 4 cups creamy broth (chicken or vegetable)
  • 8 oz cream cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1 tsp Italian seasoning
  • 2 cups spinach (optional)
  • Salt and pepper to taste
  • Crusty bread (for serving)

Instructions

  1. Heat a large pot over medium heat and sauté diced onion and minced garlic until fragrant and translucent.
  2. Add the ground meat and cook until browned, breaking it apart as it cooks.
  3. Stir in Italian seasoning, salt, and pepper.
  4. Pour in the broth and bring to a gentle simmer.
  5. Add broken lasagna noodles directly to the soup and cook until tender.
  6. Stir in cream cheese and shredded mozzarella until melted and creamy.
  7. If using spinach, add it and cook until wilted.
  8. Serve hot with crusty bread for dipping.

Notes

Garnish with fresh parsley or basil for added freshness. Great for meal prep; double the batch and store some for future use.
