White Lasagna Soup

A warm and hearty twist on traditional lasagna, this White Lasagna Soup combines creamy broth with lasagna noodles, meat, and rich cheeses.

Ingredients

  • 1 lb ground meat (beef, turkey, or sausage)
  • 8 oz lasagna noodles
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Crusty bread for serving

Instructions

  1. In a large pot, brown your ground meat over medium heat. Drain any excess fat.
  2. Add the chopped onion and minced garlic. Sauté until soft and fragrant.
  3. Sprinkle in the Italian seasoning, along with salt and pepper, and stir to combine.
  4. Pour in the broth and bring everything to a boil.
  5. Break the lasagna noodles into smaller pieces and add them to the pot. Cook until tender.
  6. Stir in the heavy cream and ricotta cheese until well combined.
  7. Remove from heat and fold in the shredded mozzarella cheese until melted.
  8. Serve hot with crusty bread.

Notes

For a vegetarian version, substitute ground meat with plant-based alternatives or mushrooms. Store leftovers in an airtight container in the refrigerator for up to 3 days.
